Avocado Tomato Super Salad

Ingredients
  1. 1 Avocado
  2. 1 Tomato
  3. 1 Onion
  4. 1 Celery Stalk
  5. Lime
  6. 1 Tsp Olive Oil
  7. 2 Tsp Vinaigraitte
  8. S/P to taste
  9. Romaine Lettuce or Iceberg lettuce
  10. Feta Cheese cut into small cubes (more for serving)
  11. (you can add corn if you want)

1. Cut the avocado into half and gently twist

·       Slice through the avocado lengthwise until you can feel the knife hit the pit. 
       Open the two halves
·       Remove the pit out and throw it away ...
·       Use the knife to make avocado slices in a horizontal manner – and scoop out the avocado flesh (gently not breaking through the avocado peel)
·       The other half can either be scooped out from the peel or mashed up.

2. Slice one tomato into fine cubes.
3. Cut one onion, which will add so much more flavour to the salad.    
4.  Thinly chop one celery stalk. This adds the crunch to the salad. (I love this part!)
5. Cut one small carrot – (to garnish at the end.)
6. Cut the iceberg lettuce up.
7. Cut up small pieces of feta cheese.

How to Make!

1)  Mix up all the ingredients in a big bowl.
2)  Add Lime
3) Add Feta Cheese
4)  Add Vinaigrette
5)  Add Salt and Pepper
